The kitchen shears also get some high-fives – strong enough to break down a chicken and fine enough to snip herbs. The pivot pin is sturdy and stays together under duress, but comes apart easily for thorough cleaning.

  3. I did have a great set of knives in my kitchen ten my daughter left home and took them with her – she reminded me that they were one of her 21st birthday presents. She is very attached to that set (now 11 years old) and has them sharpened regularly. Since she left home about 6 or 7 years ago I’ve been “making do” with an odd assortment of knives so I am actually looking for a basic set. I don’t bone meat or fillet fish – so there are knives I simply don’t need. This article has helped me to make some decisions, thank you

  4. You know I never really knew how much I should value my knife set until we lost ours in the middle of moving about two years ago. It was one of those things that you swore that you packed but somehow just managed to disappear. It took us a little while to replace it, and I remember missing it a lot in the process. Great article 🙂 Probably the best place (apart from some online stores) is famous Tokyo’s Kappabashi street – although it may be difficult to differentiate a ‘pretty’ knife from a sturdy, quality one especially for a first time buyer. Some blades are aesthetically amazing, but they don’t necessarily need to go hand in hand with edge retention, quality and sharpness. Generally, you can find much cheaper (sometimes even $50 cheaper on a $200 knife!) and quality, genuine Japanese blades at Kapabbashi-dori street, since there are many more shops and they all compete with each other for customers.

    In very general terms, the price and quality are determined by:
    – The quality of steel or alternative material used to create the blade.
    – The method used to create the shape of the blade. (stamped, roll forged, drop forged, hand forged, hand hammered etc.)
    – The sharpness, the longevity of the edge and ability to prevent rusting
    – Frequency of resharpening
    – The balance and feel
    – Quality of handle and quality of manufacturing and forging

  8. Wow! This article is excellent! I only wish I had seen it 2 years ago when I was beginning to buy quality knives. Now after too many failed purchases and a whole lot of research, I have come to the same conclusions you wrote above, and am planning to buy the Messermeister San Moritz set. I have had a Mercer Genesis chef knife that was my absolute favorite but it disappeared when I moved last year. I have had the shun high carbon knives. Unfortunately, I am not the only cook in my kitchen, and my husband and his mother didn’t believe me when I said to be gentle with them and keep them dry. Now they are riddled with rust, chips and broken tips and are completely irreparable. What a waste! So now he has his own block set of lower cost knives and I have a knife roll with my good knives neatly put away. I have a Wusthof santoku that is amazing and a Zwilling wide 7 inch chef that is so extremely comfortable to use! Their “petty knife” is just ok though. I have a Tojiro chef knife that I rescued from my husband, but not before there were several small chips in the edge. I will probably have it reworked at some point. I still have their beautiful 10 inch bread knife. Now with all I have learned, I am planning to buy a new Messermeister set and keep it safe in my little roll, to replace all the gaps in my knife arsenal.   9. I like to read the negative comments about products and see if a rep from the manufacturer attempts to rectify the situation. I’m realistic and know that there will always be a few bad experiences, but how a company responses is important to me. A reply to one negative comment about the Victorinox set suggested the knives were Chinese knock-offs, and now I’m paranoid to order from Amazon. How can one be assured they are getting the genuine product?

      In terms of place of origin and other details, we always do whatever research we can to provide the most accurate details about a given product. If you’re ever uncertain about a certain item, your best bet will usually be to contact the manufacturer directly with your questions. As for any potential to receive knockoffs via Amazon orders, we avoid third-party sales where the origin of a given product may be unclear.

  10. Nothing at all wrong with high end sets but the advice to leave off those sets “under 100 dollars” is silly. Most people I know get by very well–in my case for over 30 years with “the cheap stuff”. Costco-right now, has a set featured at 70 bucks, full tang, good steel, not prone to rust (plus I wash, rinse and dry after use, every time), AND could last a life time. Hey, you want to spend 3-500 dollars, that’s fine, no issues, but leave off the advice to “avoid” the sub 100 buck stuff, just not on the money for most of us no nothings.
