reduced beef stock
or canned beef consommé
Salt and pepper to taste
if using a canned product, it may have had salt added so remember to taste!
While the meat is resting, transfer the pan to the top of the stove over medium to high heat.
Add the red wine to the pan. Cook for 10 minutes while stirring and scraping the bottom of the pan.
Add salt and pepper to taste.
Add beef stock.
Bring to a simmer, reducing by half.
Serve with the sliced prime rib.
