Authentic European Red Berry Compote
Ingredients
  • 4cups mixed red fruits/berries*
  • 1/2cup red fruit juice**
  • 4tablespoons sugar
  • 1/4cup small tapioca pearls
Instructions
  1. Mix the fruits with the juice and sugar in a saucepan and gently boil.
  2. Sieve the mixture and collect the juice. Keep the fruit for later.
  3. Pour the juice into a saucepan and add the pearls while constantly stirring, bring to boil and cook for approximately 10 minutes.
  4. Reduce the heat and simmer on very low. Leave to simmer for approximately 20-30 minutes with the lid closed (the pearls should appear lucent but still be recognizable as such). Stir occasionally.
  5. Add the sieved fruits and let simmer for another 5 minutes.
  6. Leave to cool in the fridge for at least 3-4 hours, ideally overnight
Recipe Notes

* Cherries, strawberries, raspberries, blueberries, redcurrants, black currants all work well. If you’d rather have “yellow fruit compote” then simply replace the red fruits with a mix of green gooseberries, pineapple, peaches and bananas

** Grape or cherry juice with 100% fruit content (read the labels) with no additional sugar added. For adults consumption only, consider replacing all or some of the juice with a fruity red wine or black currant liqueur.
