Basic Prime Rib Roast
seasoning to taste
rosemary, thyme, freshly ground pepper, and garlic all work
Preheat oven to 450 degrees.
Season as desired. (I like to use garlic, salt, and pepper.)
Place, fat side up in the pan.
Cook for 20 minutes (to sear the meat) then turn the temperature down to 350 degrees.
Cook until the internal temperature reaches at least 120 degrees.
Remove from oven and allow to rest for at least 20 minutes before slicing.
Rare – 120 to 125 degrees
Medium Rare – 130 to 135 degrees
Medium – 140 to 145 degrees
Medium Well – 150 to 155 degrees
Well – 160 degrees and up
Most people will say that rare is the only way to go with this cut. I prefer mine medium rare.
