The Best Gluten-Free Brownies with Cashews

  • 7tablespoons butter
  • 1/2cup sugar
  • 4oz dark chocolate (about 3/4 cup)
  • 1cup gluten-free flour blend
  • 2teaspoons baking powder
  • 4 eggs
  • 2teaspoons pure vanilla extract
  • 1cup raw cashews (optional)
  1. Preheat the oven to 350°F, and grease and line a 13×9” rectangular baking pan with parchment paper.
  2. Melt the butter in a small saucepan over low heat. Then add the sugar, and stir until incorporated.
  3. Add the chopped chocolate, and stir until you get a thick, homogeneous liquid mixture.
  4. Sift the gluten-free flour and baking powder into a large bowl. Beat the eggs, and add them to the dry mixture, along with the vanilla. Stir until combined.
  5. Pour the chocolate mixture into the flour mixture and mix well, until you get a homogeneous brownie batter.
  6. Transfer the brownie batter into the prepared baking pan, and use a spatula to smooth out the top.
  7. Sprinkle the top with chopped cashews, and use your fingertips to press them gently into the batter.
  8. Bake for 20 minutes, until a toothpick inserted in the middle comes out clean. Cool in the pan on a wire rack for 15 to 20 minutes before removing and slicing.
