The Best Guacamole Deviled Eggs

Ingredients
  • 6 eggs
  • 2 ripe avocados
  • 1 small yellow onionfinely diced
  • 1tablespoon olive oil
  • 1tablespoon fresh lime juice
  • 1/2teaspoon salt
  • 1tablespoon chopped fresh parsley
  • fresh parsley leavesfor garnish
  • Lime wedgesfor garnish
Instructions
  1. Place the eggs in a large pot and cover with water. Bring to a boil, and cook for 1 minute before turning off the heat. Let the eggs continue cooking in the hot water for the next 10 minutes, before draining and rinsing them with cold water.
  2. Carefully peel them. Cut into half lengthwise, scoop out the egg yolks, and set them aside.
  3. Cut the avocados in half lengthwise, remove the pits, and scoop out the flesh into a bowl. Add two egg yolks to the same bowl, and mash it with the avocado.
  4. Add the onion, olive oil, lime juice, and salt. Thoroughly mix together. Fold in the chopped parsley.
  5. Scoop a heaping teaspoon of the mixture into one half of the hardboiled egg whites, and repeat with the remaining whites.
  6. Top with fresh parsley and serve with lime wedges.
