Bright Kale and Grapefruit Salad with Spiralized Apple and Red Onion

Ingredients
For the Dressing:
  • 3tablespoons grapefruit juice
  • 1/3cup olive oil
  • 1teaspoon honey
  • Salt and Pepperto taste
For the Salad:
  • 3 ruby red grapefruits
  • 2 heads kale
  • 1 applepreferably a tart variety like Granny Smith or Pink Lady
  • 1 small red onion
  • 3tablespoons grapefruit juice
  • 1/2cup walnut pieces
Instructions
  1. Cut the grapefruit into supremes, reserving any juice that drips as you slice. Evenly divide the juice in two separate bowls, and set aside.
  2. In the base of a large bowl, whisk together all of the dressing ingredients.
  3. Remove the spine from each piece of kale and chop the greens into small pieces. Toss with the dressing and massage with your hands. Set aside while you prepare the rest of the ingredients.
  4. Spiralize the apple and red onion into thin noodles and combine with the remaining grapefruit juice.
  5. Lightly toast the walnuts in a small, dry saute pan over low heat until fragrant. Remove from the heat immediately.
  6. Toss all of the toppings together with the kale and dressing and serve immediately.
