Ingredients
  • 1cup medjool datesor 1 cup Black Mission figs
  • 1/2cup slivered almonds or walnut bits
  • 1/2cup cashews
  • 1/2cup cacao powder
  • 1/3cup coconut oilmelted
  • 1/2cup unsweetened shredded coconut
  • Pinch sea salt
  • 1Tbsp chia seeds
Instructions
  1. Soak dates or figs in warm water for 10 – 15 minutes. If using figs, snip off the hard nib end of the stem.
  2. While the dates soak, add remaining ingredients to a food processor setting aside a couple of tablespoons of shredded coconut.
  3. Drain the date/fig water into a cup, add the dates to the processor and blend all ingredients until you have a nice, smooth texture.
  4. If the mixture’s too dry, add a couple of tablespoons of the water the dates were soaked in.
  5. Let the mixture sit for 5 – 10 minutes, then turn out onto butchers or waxed paper and roll into bite sized balls.
  6. Roll the balls in the remaining coconut to coat.
  7. Place the balls on a ceramic plate and refrigerate for 1 – 2 hours before serving.
