Ingredients

medjool dates
or 1 cup Black Mission figs

slivered almonds or walnut bits

cashews
1/2

cacao powder

coconut oil
melted
1/2

unsweetened shredded coconut

Instructions
Soak dates or figs in warm water for 10 – 15 minutes. If using figs, snip off the hard nib end of the stem.
While the dates soak, add remaining ingredients to a food processor setting aside a couple of tablespoons of shredded coconut.
Drain the date/fig water into a cup, add the dates to the processor and blend all ingredients until you have a nice, smooth texture.
If the mixture’s too dry, add a couple of tablespoons of the water the dates were soaked in.
Let the mixture sit for 5 – 10 minutes, then turn out onto butchers or waxed paper and roll into bite sized balls.
Roll the balls in the remaining coconut to coat.
Place the balls on a ceramic plate and refrigerate for 1 – 2 hours before serving.
