First, you need to place the sugar into the ice cream server. Then, using the espresso machine, make two shots of espresso.
Next, take one teaspoon of the hot espresso and then add it into the ice cream server. You will then observe that the hot espresso will be melting the sugar. Mix them well.
The sugar will become light brown and in a liquid substance. Then add the remaining espresso to the ice cream server.
Beat well with a whisk. You should be able to produce a light brown foamy top called the espumita.
