Ingredients
4large carrots
1cupgolden raisins
1cupblack raisins
2large clovesgarlic
3egg yolks
1tablespoonfresh lemon juice
Salt and freshly ground black pepperto taste
5tablespoonsneutral-flavored oil(like sunflower, grapeseed, or canola)
fresh parsleychopped
Instructions
Peel the carrots and then julienne them into long, thin noodles using a julienne peeler. Use a knife to cut the noodles into 3-inch-long pieces.
Peel the garlic and pound in a mortar and pestle until smashed, but not quite so much that you have formed a paste.
Place the garlic, egg yolks, fresh lemon juice, salt, and pepper in a large mixing bowl, and whisk to combine. Whisk well while drizzling in the oil for about 30 seconds until you get a pale yellow aioli. Strain through a mesh sieve.
In a large bowl, combine the salad ingredients. Pour the dressing over the carrots and raisins, and mix well.
