Carrot Raisin Salad with Lemon Aioli Dressing

  • 4 large carrots
  • 1cup golden raisins
  • 1cup black raisins
  • 2large cloves garlic
  • 3 egg yolks
  • 1tablespoon fresh lemon juice
  • Salt and freshly ground black pepperto taste
  • 5tablespoons neutral-flavored oil(like sunflower, grapeseed, or canola)

  1. Peel the carrots and then julienne them into long, thin noodles using a julienne peeler. Use a knife to cut the noodles into 3-inch-long pieces.
  2. Peel the garlic and pound in a mortar and pestle until smashed, but not quite so much that you have formed a paste.
  3. Place the garlic, egg yolks, fresh lemon juice, salt, and pepper in a large mixing bowl, and whisk to combine. Whisk well while drizzling in the oil for about 30 seconds until you get a pale yellow aioli. Strain through a mesh sieve.
  4. In a large bowl, combine the salad ingredients. Pour the dressing over the carrots and raisins, and mix well.
  5. Garnish with fresh parsley.
