Chickpea and Black Bean Vegetarian Salad with Fresh Herbs
Ingredients

can black beans
drained and rinsed

can garbanzo beans
drained and rinsed

cup
frozen corn or fresh off the cob

large red onion
chopped

large red peppers
seeded and chopped
4
celery stalks
chopped
2
carrots
chopped
1/2
cup
chunky salsa
2
cloves
garlic
minced
1/4
cup
cilantro
chopped
1/2
cup
basil leaves
chopped
1
lime
juiced
2
tablespoons
olive oil
Salt and Pepper
to taste
Instructions
In a large mixing bowl, combine beans and corn.
Add peppers, onion, and celery, and carrots.
Add salsa, garlic, cilantro, basil, olive oil, and lime juice.
Season with salt and pepper.
Stir until well combined.
Place in refrigerator and chill for at least 2 hours before serving.
