Chickpea and Black Bean Vegetarian Salad with Fresh Herbs
Ingredients
  • 1 can black beansdrained and rinsed
  • 1 can garbanzo beansdrained and rinsed
  • 1cup frozen corn or fresh off the cob
  • 1 large red onionchopped
  • 2 large red peppersseeded and chopped
  • 4 celery stalkschopped
  • 2 carrotschopped
  • 1/2cup chunky salsa
  • 2cloves garlicminced
  • 1/4cup cilantrochopped
  • 1/2cup basil leaveschopped
  • 1 limejuiced
  • 2tablespoons olive oil
  • Salt and Pepperto taste
Instructions
  1. In a large mixing bowl, combine beans and corn.
  2. Add peppers, onion, and celery, and carrots.
  3. Add salsa, garlic, cilantro, basil, olive oil, and lime juice.
  4. Season with salt and pepper.
  5. Stir until well combined.
  6. Place in refrigerator and chill for at least 2 hours before serving.
