Chilled Cucumber Soup
  • 2 cucumbers
  • 1clove garlic
  • 2tablespoons olive oil
  • 5 1/2cups plain yogurt
  • Salt and pepper to taste
  • 1/2teaspoon sugar
  • 1-2tablespoons Lemon juice
  • 1bunch of dill
  1. Place a about a third of a cucumber aside for garnish. Peel and roughly chop the rest. Peel the garlic.
  2. Blend the cucumber with garlic, oil, yogurt and a splash of water to keep it liquid enough to mix.
  3. Season with salt, pepper, sugar and lemon juice. Chill in the fridge.
  4. Wash and chop the dill. Cut the remaining cucumber into thin slices.
  5. Garnish with the herbs and cucumber slices and serve.
