Ingredients
  • 2tablespoons olive oil
  • 2 medium carrotschopped
  • 3stalks celerychopped
  • 1 medium onionchopped
  • 3 cloves garlicminced
  • 8cups chicken stock
  • 1tablespoon dried thymeor 10 fresh sprigs
  • 3 bay leaves
  • 1teaspoon garlic powder
  • 1teaspoon onion powder
  • saltto taste
  • Freshly ground black pepperto taste
  • 8ounces uncooked pasta
  • 1 1/2cups shredded cooked chicken
Instructions
  1. Place a soup pot over medium heat and coat with the olive oil. Add the carrots, celery, onion, and garlic. Cook for about 6 minutes, until the vegetables are softened but not browned, stirring occasionally.
  2. Pour the chicken stock into the pot with the vegetables. Add the dry seasonings and fresh herbs and bring the liquid to a boil. Add the uncooked pasta and chicken, and continue to simmer until the pasta is cooked through. Season to taste and serve.
