Coconut Mango Rice Pudding
toasted coconut flakes
peeled and diced (divided)
In a medium saucepan, combine rice, coconut milk, sugar, and vanilla.
Heat over high heat and bring to a boil.
Cook for 20 minutes until the rice soaks up the liquid and takes on a pudding consistency. Remove from heat.
Add ½ cup mango and stir until well incorporated.
Let cool and transfer into bowls. Garnish with mango and coconut.
