Coconut Mango Rice Pudding
  • 2cups cooked rice
  • 2cups coconut milk
  • 1/2cup sugar
  • 1teaspoon salt
  • 1teaspoon vanilla extract
  • 3/4cup toasted coconut flakes
  • 1cup Mangopeeled and diced (divided)
  1. In a medium saucepan, combine rice, coconut milk, sugar, and vanilla.
  2. Heat over high heat and bring to a boil.
  3. Cook for 20 minutes until the rice soaks up the liquid and takes on a pudding consistency. Remove from heat.
  4. Add ½ cup mango and stir until well incorporated.
  5. Let cool and transfer into bowls. Garnish with mango and coconut.
