Crepes with Strawberry Sauce
stems removed and cut
In a large saucepan, combine 1 2/3 cups strawberries, sugar, and vanilla.
Cook over medium heat, stirring occasionally until sauce thickens.
Remove from heat and puree.
Add remaining 1/3 cup of strawberries and stir until well incorporated.
To construct crepes
Pour sauce in center of crepes and fold or roll as desired.
Drizzle with remaining sauce.
