Easy Miso Soup
  • 6cups wateror vegetable stock
  • 18 ounce package silken tofucut into 1 inch cubes
  • 1/2cup mushroomssliced (shiitake, enoki, or your favorite variety)
  • 1/4cup dried wakameseaweed, chopped
  • 4tablespoons miso paste(red or white)
  • 2 green onionschopped, white and green parts
  1. Place water in a pot and bring to a boil.
  2. Lower heat to medium-low and add the tofu, mushrooms, and seaweed.
  3. Simmer for 5 minutes, stirring occasionally. Remove from heat.
  4. Spoon the miso paste into a medium bowl.
  5. Ladle about 1/2 cup of the homemade dashi stock into the bowl. Stir to incorporate the miso until the mixture is smooth.
  6. Add the miso paste to the pot and stir well.
  7. Add green onions and simmer on low heat for 2-3 more minutes.
  8. Serve immediately.
