Ingredients
For the filling:
  • 2pounds pearspeeled, cored, and chopped
  • 1cup coconut sugar
  • 1tablespoon ground cinnamon
For the topping:
  • 1/2cup slivered almonds
  • 1/2cup coconut sugar
  • 3/4cup all-purpose einkorn flour*
  • 1/4teaspoon salt
  • 1/4cup rolled oats
  • 1/2cup unsalted buttercold and cubed, 1 stick
Instructions
  1. Preheat oven to 350°F, and butter a two-quart baking dish.
  2. In a bowl, combine pears, 1 cup of coconut sugar, and the cinnamon. Pile fruit in the buttered pan.
  3. In a medium bowl, stir together almonds, 1/2 cup coconut sugar, flour, salt, and oats. Cut in 1/2 cup of cold, cubed butter. Spread this mixture over the fruit in the buttered pan.
  4. Slide into the oven and bake, uncovered, one hour. Crisp is done when topping is golden and bubbly.
