Easy Sausage Fried Rice with Garlic and Ginger
Simple sausage fried rice that’s filled with the flavors of garlic and freshly grated ginger, and topped with spring onions. This is the taste of Asia.

Ingredients
  • 1 1/2cups long grain white rice
  • 4 eggsbeaten
  • 1 oniondiced
  • 1 carrotdiced
  • 4 garlic clovesminced
  • 1 tablespoon freshly grated ginger
  • 6 chicken sausages or hot dogs,diced
  • 1/4cup chopped fresh spring onions
  • 1/4cup soy sauce
  • salt to taste
Instructions
  1. Rinse the grains with water until the water runs clear (you may need to rinse it 3 or 4 times).
  2. To cook your rice on the stovetop, combine the rinsed grains with 1 3/4 cups of filtered water and bring it to a boil, then lower the heat and cover it with a lid. Let it cook for 10 minutes until the water has been absorbed, and it is fully cooked and fluffy.
  3. In the meantime, beat the eggs in a shallow dish.
  4. Heat up a little oil in a large skillet over low heat, and pour the beaten eggs in the middle of the skillet, swirling to cover the entire surface of the pan.
  5. Make an omelet and let it cook until just golden on the bottom before flipping it over and cooking until golden on the other side.
  6. Set the cooked omelet aside and cut it into very small pieces.
  7. Heat up a little more oil in the same skillet and sauté the diced onions and carrots until the onions turn translucent and the carrots are tender, about 15 minutes. Stir every few minutes to prevent the vegetables from burning.
  8. Add the minced garlic and freshly grated ginger and sauté for a minute until they become fragrant.
  9. Add the diced sausages and sauté for a couple of minutes until they are cooked through.
  10. Scoop the rice into the skillet and pour the soy sauce evenly over it, mixing well with a wooden spoon until the soy sauce has been evenly distributed.
  11. Finally, in the cut omelet and mix well before seasoning with salt to taste. Divide evenly into four bowls, garnish with spring onions, and serve.

Tip: If you prefer to have a vegetarian version instead, simply leave out the chicken sausage and add diced extra-firm tofu.
