Ingredients
  • 6 hardboiled eggspeeled and chopped
  • 1/4cup mayo
  • 1 1/2teaspoons Dijon mustard
  • Juice of half a lemon
  • 1tablespoon chopped chives
  • Salt and pepper to taste
Instructions
  1. Place the peeled and chopped eggs in a bowl and mash using the tines of a fork until you have a pretty finely minced mixture.
  2. Add all the additional ingredients and stir until you have a nice, smooth salad.
  3. Serve as is, on a bed of lettuce, or, my favorite, as a sandwich with lettuce and bacon.
