Fresh Green Salad with Arugula, Beets, Goat Cheese, and Olive Oil
Ingredients
  • 6 beets
  • 1 1/2heads arugularinsed and torn
  • 4ounces goat cheesecrumbled
  • 1/2cup chopped walnuts or sliced almonds
  • 1/4cup dried cranberries
  • 2tablespoons balsamic vinegar
  • 1/3cup extra virgin olive oil
  • Salt and Pepperto taste.
Instructions
  1. Place beets in a medium saucepan, cover with water, and season with salt. Bring to a boil and cook until tender. Remove from heat.
  2. When the beets have cooled enough that you can handle them, peel and slice them.
  3. In a large bowl, mix together the vinegar and oil. Place the beets in the bowl at let marinade for at least 30 minutes.
  4. Toss arugula in the bowl with the beets.
  5. Season with salt and pepper, to taste.
  6. Add cheese, cranberries, and nuts on top.
