Fresh Green Salad with Arugula, Beets, Goat Cheese, and Olive Oil

arugula
rinsed and torn

goat cheese
crumbled

chopped walnuts or sliced almonds
1/4
cup
dried cranberries

tablespoons
balsamic vinegar
1/3
cup
extra virgin olive oil
Salt and Pepper
to taste.
Instructions
Place beets in a medium saucepan, cover with water, and season with salt. Bring to a boil and cook until tender. Remove from heat.
When the beets have cooled enough that you can handle them, peel and slice them.
In a large bowl, mix together the vinegar and oil. Place the beets in the bowl at let marinade for at least 30 minutes.
Toss arugula in the bowl with the beets.
Season with salt and pepper, to taste.
Add cheese, cranberries, and nuts on top.
