Frozen Yogurt Popsicles with Oats and Blueberry Jam
  • 3cups blueberries
  • 1/4cup sugar
  • 2cups vanilla yogurt
  • 1cup granola
  • 1cup blueberry jam
  • handful fresh Blueberries(optional)
For the Jam:
  1. Place blueberries and sugar in a medium saucepan over medium heat, and stir to combine.
  2. Continue to cook until thickened, about 30 minutes.
  3. Scrape jam into a large mixing bowl with a rubber spatula and set aside to cool.
For the Popsicles:
  1. In a medium bowl, mix yogurt, ¼ cup of granola, and ¼ cup of the jam together. Stir until well incorporated.
  2. Place a heaping spoonful of the yogurt mixture in the bottom of each mold.
  3. Add a heaping spoonful of granola, and then a spoonful or two of jam.
  4. Continue layering until the molds are filled.
  5. Insert a popsicle stick into each mold and place into the freezer, leaving space at top since filling will expand as it freezes. Freeze until solid, at least 6 hours.
  6. Unmold and enjoy!
