Fruit Salad Yogurt Parfait

Ingredients
  • 1 medium orangepeeled and chopped into bite sized bits
  • 1 bananapeeled and sliced
  • 1 pearcored and cubed
  • 1 Mangopeeled and cubed
  • 1/2cup blueberriesrinsed and drained well
  • 1/4cup walnut bits
  • 1/4cup unsweetened shredded coconut
  • 4tablespoons dark chocolateat least 70% cacao, slivered with a vegetable peeler (optional)
  • 10 fresh basil leavesminced
  • 1 sprig of fresh mintminced
  • 1cup granolaoptional
  • 2cups unsweetened Greek yogurt *
Instructions
  1. In a medium mixing bowl, add the oranges and press gently with the back of a wooden spoon to release some juice. Gently fold in the mango, pear, banana and blueberries.
  2. In parfait cups, add a couple of tablespoons of granola if using, then a couple of tablespoons of yogurt, top with a couple of tablespoons of fruit mixture then sprinkle with walnuts and coconut and repeat.
  3. Top parfaits with chocolate and the minced basil and mint.

*Frozen vanilla flavored yogurt will cool this parfait down even more when it’s really hot outside.
