1medium orangepeeled and chopped into bite sized bits
1bananapeeled and sliced
1pearcored and cubed
1Mangopeeled and cubed
1/2cupblueberriesrinsed and drained well
1/4cupwalnut bits
1/4cupunsweetened shredded coconut
4tablespoonsdark chocolateat least 70% cacao, slivered with a vegetable peeler (optional)
10fresh basil leavesminced
1sprig of fresh mintminced
1cupgranolaoptional
2cupsunsweetened Greek yogurt *
Instructions
In a medium mixing bowl, add the oranges and press gently with the back of a wooden spoon to release some juice. Gently fold in the mango, pear, banana and blueberries.
In parfait cups, add a couple of tablespoons of granola if using, then a couple of tablespoons of yogurt, top with a couple of tablespoons of fruit mixture then sprinkle with walnuts and coconut and repeat.
Top parfaits with chocolate and the minced basil and mint.

*Frozen vanilla flavored yogurt will cool this parfait down even more when it’s really hot outside.
