Guinness-Braised Pork Lion
It goes great with mashed potatoes, but you could also roast some potatoes in the oven right alongside the pork loin to make a complete dinner even more easily with no stovetop work involved.

Ingredients
  • 1 2 –pound pork loin
  • 1bottle of Guinness
  • 2cloves of garlicminced
  • 2 -3 sprigs fresh thymeminced
  • 1 sprig fresh rosemaryminced
  • 2tablespoons honey
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 350 degrees.
  2. Season the pork loin liberally on all sides with salt and pepper. Mix garlic, thyme, rosemary, and honey to make a paste and rub all over the pork as well.
  3. Heat a large pan over medium heat and sear the pork on all sides to get a nice, golden crust.
  4. Remove the pork loin to a roasting pan and pour in the bottle of Guinness. Cover the pan tightly with foil and roast for 1 1/2 hours. Let rest for 10-15 minutes before removing from pan to serve.
  5. You can make a gravy by melting 2 tablespoons of butter, stirring in 2 tablespoons of flour and cooking for 2 minutes. Pour in a little of the pan juices from the roasting pan and whisk well to dissolve the flour. Bring to a low boil to thicken, and you’re done. Taste and add salt and pepper if desired. Also, you can add a pan of potatoes to roast with the pork during the last 30 minutes of cooking. Yum!
