  • 2cups olive oil
  • 4tablespoons white wine vinegar
  • Juice of half a lemon
  • Zest of half a lemon
  • 1 clove garlicminced
  • 4 sprigs parsleyminced
  • 3tablespoon fresh mixed herbs to taste – basil leavestarragon, savory or thyme
  • 1/4teaspoon dry mustard
  • A pinch of sea salt
  • 1/4teaspoon fresh ground black pepper
  1. In a tightly lidded jar add all ingredients and shake well to emulsify. Chill well for several hours before using.
