Ingredients
  • 5cups fresh Blueberries
  • 1cup apple juice
  • 1cup raw honey
  • 1box powdered pectin
  • 1/4teaspoon cinnamon
  • 1/2teaspoon nutmeg
  • 1teaspoon pure vanilla extract
  • 6one-half pint jarswith lids and bands
Instructions
  1. Wash thoroughly and sterilize the jars, lids and bands.
  2. Place the blueberries in a large pot and mash with a potato masher. Add apple juice and powdered pectin and stir continuously over medium high heat, just until the mixture comes to a boil.
  3. Add honey, cinnamon, nutmeg, and vanilla and boil for 1 minute, stirring constantly.
  4. Remove from heat and ladle into hot sterile jars, wipe the rims and threads clean with a damp, sterile cloth, seal with lids and bands then process in a hot water bath for 15 minutes.
  5. When cool enough to handle, label and date, then store in a cool cupboard out of direct light for up to one year.
