Lime and Dried Cranberry Semifreddo
  • 4 limes
  • 1/2cup dried cranberries
  • 18-ounce can sweetened condensed milk
  • 1/2cup heavy cream
  1. Zest one lime. Juice the zested lime and the three remaining limes.
  2. Combine the lime juice and dried cranberries in a bowl. Let sit for half an hour at room temperature to soften the cranberries.
  3. Fold together the sweetened condensed milk, lime zest, lime juice, and cranberries.
  4. Whip cream until soft peaks appear.
  5. Fold whipped cream into condensed milk mixture.
  6. Transfer into individual molds, a loaf pan lined with plastic wrap, or a lidded container for scooping, and freeze for five hours.
