  • 1 Mangopeeled and diced
  • 1/2cup diced English cucumber,
  • 1 large tomatodiced
  • 1tablespoon finely chopped jalapeno
  • 1/3cup diced red onion
  • 1tablespoon lime juice
  • 1/3cup roughly chopped cilantro
  • 1tablespoon olive oil
  • 1/4teaspoon sea salt
  • 1generous dash Freshly ground black pepper
  1. In a glass or ceramic dish, combine the mango, cucumber, tomato, jalapeno, and onion.
  2. Sprinkle the lime juice and olive oil over the top and stir, coating all of the ingredients well.
  3. Season with salt and pepper and give it a final stir.
  4. Cover and chill before serving.

Pepper that is freshly ground is the only way to go with dishes like this.
