Mediterranean Spinach and Cheese Crepes
Ingredients

frozen spinach
thawed and drained

cup
diced onion

tablespoons
butter
1/2
cup
heavy cream
1/2
cup
sour cream
1/2
cup
feta cheese
Salt and Pepper
to taste
Instructions
Filling
In a medium saucepan, add butter and onions. Cook until tender.
Add spinach.
Add heavy cream, sour cream, and feta cheese.
To construct crepes
Spoon spinach mixture into the center of each crepe.
Roll and serve warm.
