Mini Quiche with Puff Pastry and Cheese

frozen puff pastry
thawed overnight in the refrigerator
4
large eggs
4
ounces
cheddar cheese
shredded
3/4
cups
whole milk or half and half
2
cloves
garlic
minced
1
tablespoon
olive oil
1
yellow onion
thinly sliced
2
cups
spinach
Salt and pepper to taste
Instructions
Preheat oven to 375 degrees.
Grease muffin tray with nonstick cooking spray.
Cut puff pastry sheets with a cookie cutter or knife and line the muffin cups with the dough.
Add olive oil, garlic, and onion to a medium pan. Saute until the onions glass.
Add spinach, cooking until the spinach becomes tender.
Season with salt and pepper.
In a medium bowl, whisk the milk and eggs together. Add the cheese to the mixture.
Add the spinach mixture to the prepared muffin tins.
Spoon egg and cheese mixture over the spinach, filling the almost to the top.
Bake 35-45 minutes until the eggs are set and the crust has browned.
Remove from oven and let cool 10 minutes before serving.
