Oil and Vinegar Potato Salad
Ingredients

potatoes
red or yukon gold
1/4
cup
red wine vinegar

tablespoons
Dijon mustard
the kind with the coarser ingredients
1/3
cup
extra virgin olive oil
1/2
red onion
chopped
2
tablespoons
cilantro
chopped
1/2
teaspoon
sugar
Salt and Pepper
to taste
parsley
for garnish
Instructions
Place potatoes in a large pot and fill with water. Place lid on pot and bring to a boil over medium to high heat.
When potatoes are tender, remove from heat, drain, and rinse with cold water until they are cool enough to handle.
Chop the potatoes and place them in a large mixing bowl.
Add onion, cilantro, sugar, mustard, vinegar, and oil and toss until well coated.
Stir the potatoes to mash slightly, giving it a more spoonable texture.
Add salt and pepper, to taste. Garish with parsley if desired.
