Oil and Vinegar Potato Salad
Ingredients
  • 1 1/2pounds potatoesred or yukon gold
  • 1/4cup red wine vinegar
  • 2tablespoons Dijon mustardthe kind with the coarser ingredients
  • 1/3cup extra virgin olive oil
  • 1/2 red onionchopped
  • 2tablespoons cilantrochopped
  • 1/2teaspoon sugar
  • Salt and Pepperto taste
  • parsleyfor garnish
Instructions
  1. Place potatoes in a large pot and fill with water. Place lid on pot and bring to a boil over medium to high heat.
  2. When potatoes are tender, remove from heat, drain, and rinse with cold water until they are cool enough to handle.
  3. Chop the potatoes and place them in a large mixing bowl.
  4. Add onion, cilantro, sugar, mustard, vinegar, and oil and toss until well coated.
  5. Stir the potatoes to mash slightly, giving it a more spoonable texture.
  6. Add salt and pepper, to taste. Garish with parsley if desired.
