Decadent Cinnamon and Orange Cream Dessert
  • Juice and zest of 1 orange
  • 1 cardamom pod
  • 2 egg whites
  • pinch of salt
  • 3oz sugar
  • 7oz heavy whipping cream
  • 9oz creme fraiche, cream cheese, or yogurt
  • 1teaspoon cinnamon
  • Chocolate sprinkles or crumbled cookies for the topping(optional)
  1. Crush the cardamom pod in a mortar, remove the outer covering, and thoroughly grind the seeds as fine as possible with the pestle.
  2. Whisk the egg whites with salt and sugar until stiff peaks form. In a separate bowl, whip the cream until stiff. Set aside.
  3. In a large bowl, mix the yogurt, creme fraiche or curd cheese with the orange juice, zest, cardamom and cinnamon.
  4. Gently fold in the stiff egg whites and the whipped cream, using a rubber spatula.
  5. Fill into individual jars or a large serving bowl, and refrigerate until ready to serve.
