Pecan Kale Pesto Sauce
An alternative to the usual pine nut recipe.

Ingredients
  • 4 large leaves kale
  • 1/2cup raw pecans
  • 6 Tbsp nutritional yeast
  • 1tsp Lemon juice
  • 1-2 garlic clovesminced
  • saltto taste
Instructions
  1. In a small pot, bring water to a boil. Once it’s begun to bubble, submerge the kale leaves in the water and blanch for two minutes. Then strain the kale and add it to your blender or food processer.
  2. Add in all of the other ingredients and blend. You may need to use a plunger, or add in a small splash of water to help the sauce process. It should come out smooth but thick.
  3. Add this pesto sauce to your favorite spaghetti noodles or other pasta. It can also be added to sandwiches and pizza.
