Ingredients
  • 5 potatoesgood-sized
  • 3 eggshardboiled
  • 1/2cup green onionchopped
  • 1/2cup sweet purple onionchopped
  • 1/2cup pickle relish*I use spicy relish regular dill relish would be fine
  • 1teaspoon saltor more, if needed
  • 1tablespoon Mustard
  • 1/4cup mayo
  • 4slices baconcooked and crumbled
Instructions
  1. Peel, dice and boil the potatoes until they are fork tender. Drain.
  2. Place the cooked potatoes in a large mixing bowl along with all of the other salad ingredients and toss lightly until everything is well mixed.
  3. Refrigerate until ready to serve.
