Ingredients

potatoes
good-sized

eggs
hardboiled

cup
green onion
chopped
1/2
cup
sweet purple onion
chopped
1/2
cup
pickle relish*
I use spicy relish regular dill relish would be fine

teaspoon
salt
or more, if needed
1
tablespoon
Mustard
1/4
cup
mayo
4
slices
bacon
cooked and crumbled
Instructions
Peel, dice and boil the potatoes until they are fork tender. Drain.
Place the cooked potatoes in a large mixing bowl along with all of the other salad ingredients and toss lightly until everything is well mixed.
Refrigerate until ready to serve.
