Ingredients
  • 2cups all purpose flour
  • 2teaspoons pumpkin spice mix
  • 2teaspoons baking powder
  • 1/2teaspoon baking soda
  • 1teaspoon salt
  • 15ounce can pure pumpkin puree(or an equal weight fresh puree)
  • 1/2cup granulated Sugar
  • 1/2cup brown sugarlightly packed
  • 1/2cup evaporated milkregular or fat-free
  • 2 large eggs
  • 1tablespoon vegetable or canola oil
  • 1/2cup chopped nutswalnuts, almonds, or pecans
  • 1/2cup dried fruitraisins or dried cranberries
Instructions
  1. Preheat oven to 350°F. Lightly spray a 9 x 5” loaf pan. Set aside.
  2. In a medium mixing bowl, whisk together the flour, pumpkin spice, baking powder, baking soda, and salt.
  3. In a separate large bowl, combine the pumpkin, granulated sugar, brown sugar, evaporated milk, eggs, and oil.
  4. Add the flour mixture to the liquid mixture. Stir together until just combined. Do not overmix.
  5. Lightly fold in the dried nuts and fruit.
  6. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a wooden pick inserted in the center comes out clean.
  7. Remove from the oven and allow to cool for 15 minutes. Remove from the pan and let cool completely on a cooling rack.
  8. Serve with your favorite butter, jams, and jellies!
