  • 2tablespoons olive oil
  • 2pints cherry tomatoes
  • 4cloves garlicminced
  • Salt and black pepperto taste
  • 1 1/2pounds raw shrimppeeled and deveined
  • 1/2cup red pepperdiced
  • 1/2cup fresh parsleychopped
  • 4ounces feta cheesecrumbled
  • 1/2 lemon
  • Toasted French baguette slicesfor serving
  1. Preheat oven to 425°F.
  2. Coat the bottom of a 9×13” rectangular baking dish with olive oil.
  3. Place the cherry tomatoes, minced garlic, salt, and pepper in the prepared baking dish and mix well. Bake for 15 minutes.
  4. Add the shrimp and diced red pepper, then bake for 25 minutes more, until the shrimp is fully cooked.
  5. Remove the baking dish from the oven and add the chopped parsley and crumbled feta cheese. Squeeze the lemon over the dish. Mix well to combine.
  6. Serve the shrimp with crusty baguette slices, as an appetizer or light main dish.
