Ingredients
  • 1pound carrots
  • 3tablespoons olive or vegetable oil
  • 2tablespoons fresh rosemary
  • Salt and pepper to taste
  • 2tablespoons honey
Instructions
  1. Preheat the oven to 375°F.
  2. Peel the carrots and toss them in the oil, with a few dashes of salt and pepper. Remove the rosemary from the stems, and chop it.
  3. Place the peeled vegetables in a baking pan or dish, and sprinkle them with the fresh rosemary.
  4. Roast for 30 minutes, then drizzle honey over the carrots. Tossing well, and then roast for another 20 minutes until the vegetables are fork tender.
