Spinach and Sun Dried Tomato Pasta Salad
Ingredients
  • 1pound pasta* cooked al dentecooled and drained
  • 1/3cup extra virgin olive oil
  • 4tablespoons balsamic vinegar
  • 1small package fresh baby spinachfinely chopped
  • 1jar sun dried tomatoesdrained and cut into slices
  • 1/3pound feta cheesecrumbled
  • 1/2cup pitted Kalamata oliveschopped
  • 1 medium red onionchopped
  • 1tablespoon Basil
  • 1teaspoon oregano
  • 1teaspoon parsley
  • Salt and Pepperto taste
Instructions
  1. In a large salad bowl, combine oil, vinegar, basil, oregano, and parsley.
  2. Add remaining ingredients to the bowl and toss until well coated.
  3. Season with salt and pepper, to taste.

* Penne, bow tie pasta, or rotini all work equally well.
