Spinach and Sun Dried Tomato Pasta Salad

pasta* cooked al dente
cooled and drained

extra virgin olive oil

balsamic vinegar

fresh baby spinach
finely chopped

jar
sun dried tomatoes
drained and cut into slices
1/3
pound
feta cheese
crumbled
1/2
cup
pitted Kalamata olives
chopped
1
medium red onion
chopped
1
tablespoon
Basil
1
teaspoon
oregano
1
teaspoon
parsley
Salt and Pepper
to taste
Instructions
In a large salad bowl, combine oil, vinegar, basil, oregano, and parsley.
Add remaining ingredients to the bowl and toss until well coated.
Season with salt and pepper, to taste.
Recipe Notes
* Penne, bow tie pasta, or rotini all work equally well.
