Sweet Potato Hash
chopped into small cubes
any variety will do
a sweet onion
salt & pepper
Add potatoes to a large sauce pan filled with boiling salted water. Allow to cook for 2-5 minutes, then drain potatoes and pat dry.
Next, add coconut oil to a large frying pan with peppers, onion and garlic, and sauté for 2-3 minutes.
Add the potatoes, rosemary, paprika, a little salt & pepper, and cook for another 5 minutes. Add a little more oil if sticking to the pan.
Finally, add basil and lightly toss. Serve right away.
Tip: I like to serve these with salsa.
