Ingredients
  • 6 ounces egg whites
  • 12 ounces sugar
  • 1pound, 5 ounces buttersoftened and cut into small cubes
  • 3/4teaspoon Lemon juice
  • 1 1/2teaspoons vanilla extract
Instructions
  1. Prepare a double boiler. When the water starts to steam, combine the egg whites and sugar and cook over the steam, beating constantly with a hand whisk until all the sugar completely dissolves, and the mixture reaches about 145°F.
  2. Transfer the mixture to the bowl of a stand mixer with the whisk attachment. Whip at high speed until soft peaks form and the meringue is completely cool, about 10-15 minutes.
  3. Adding just a few pieces at a time, incorporate the soft butter into the meringue and continue to whip at high speed. Scrape down the sides of the bowl if the butter sticks. Whip until all of the butter is incorporated and the mixture is smooth, light, and fluffy, about 10 minutes.
  4. Add the lemon juice and vanilla extract and whip to completely incorporate, about 5 minutes.
  5. Use immediately or store for later use.
