The Best Cheese Soufflé
  • 1 1/4cups whole milk
  • 3tablespoons unsalted butter
  • 3tablespoons all purpose flour
  • 1/2teaspoon salt
  • 2tablespoons Parmesan cheese
  • 6 large egg whites
  • 4 large egg yolks
  • 1cup Gruyere cheeseor whatever cheese you have on hand
  1. Preheat oven to 400 degrees.
  2. In a medium saucepan, melt the butter. Mix in the flour and salt and stir until you create a paste. Gradually, whisk in milk until smooth. Cook over medium heat, stirring continuously until mixture comes to a boil.
  3. Reduce heat to low and whisk until thickened.
  4. Add cheese. Stir until well mixed. Remove from heat.
  5. Beat egg whites with an electric or stand mixer until they form stiff peaks.
  6. Stir egg yolks into cheese sauce until well blended.
  7. Slowly fold cheese mixture into the egg whites until well incorporated.
  8. Lightly grease ramekins (or soufflé dish) and dust with parmesan cheese to coat sides.
  9. Transfer mixture into ramekins.
  10. Place in oven and turn heat down to 375 degrees.
  11. Bake 30 minutes or until soufflé puffs up and is browned.
  12. Serve immediately.
