Tomatillo Mojito
For the juice:
  • 4 medium-sized tomatillos
For the drink:
  • 8 mint leavesplus a few sprigs for garnish
  • 1ounce lime juice
  • 1ounce tomatillo juice
  • 1teaspoon granulated Sugar
  • 4 ice cubes
  • 2ounces light rum
  • 2ounces club soda
For the juice:
  1. Peel and discard the husks of the fruit. Rinse clean under cool water.
  2. Roughly chop the fruit and blend in a blender or food processor until smooth.
  3. Pass through a strainer and discard the seeds.
For the drink:
  1. Muddle the mint, lime juice, tomatillo juice, and sugar in the bottom of a cocktail shaker, cup, or pitcher.
  2. Add the ice and rum. If using a cocktail shaker, place the lid on it and shake. Pour everything into a highball glass – you want to keep the mint and ice in the drink! If using a cup or pitcher, just stir together.
  3. Top with club soda. Garnish with an extra sprig of mint if desired, and serve!
