Ingredients
3poundspotatoes
2 3/4cupssour creamA 680 gram container
1poundchopped baconAbout 18 slices, cooked and drained
1/3poundfeta cheesecrumbled (feel free to add more if you want)*
1cupsweet purple onionchopped
3/4cupbread and butter pickleschopped
1/2cupgreen onionschopped, to taste
1tablespoonsea saltto taste
2tablespoonsground black pepperto taste
Instructions
Scrub the outside of the potatoes really well. Leave the skins on and cut up into bite-sized cubes.
Boil them until tender, but not falling apart. Drain in a colander and allow to cool.
While the potatoes are boiling, mince and chop the other ingredients.
Add all of the ingredients minus the green onions and about 1/3 of the bacon to a mixing bowl and stir to combine. Be gentle, you don’t want the potatoes to break up.
Transfer to a serving dish. Sprinkle the remaining bacon and the green onions on top and serve immediately.
