Ingredients
  • 3pounds potatoes
  • 2 3/4cups sour creamA 680 gram container
  • 1pound chopped baconAbout 18 slices, cooked and drained
  • 1/3pound feta cheesecrumbled (feel free to add more if you want)*
  • 1cup sweet purple onionchopped
  • 3/4cup bread and butter pickleschopped
  • 1/2cup green onionschopped, to taste
  • 1tablespoon sea saltto taste
  • 2tablespoons ground black pepperto taste
Instructions
  1. Scrub the outside of the potatoes really well. Leave the skins on and cut up into bite-sized cubes.
  2. Boil them until tender, but not falling apart. Drain in a colander and allow to cool.
  3. While the potatoes are boiling, mince and chop the other ingredients.
  4. Add all of the ingredients minus the green onions and about 1/3 of the bacon to a mixing bowl and stir to combine. Be gentle, you don’t want the potatoes to break up.
  5. Transfer to a serving dish. Sprinkle the remaining bacon and the green onions on top and serve immediately.
