Vanilla Spice Cookies
Ingredients
  • 1/2cup unsalted buttersoftened
  • 1cup firmly packed brown sugar
  • 1 egg*
  • 2teaspoons vanilla extract
  • 1 3/4cups all purpose flour
  • 1/2teaspoon baking soda
  • 1/4teaspoon salt
  • 1/2cup chopped pecans(optional)
  • 1/4teaspoon ground cinnamon
  • 1/4teaspoon ground cardamom
Instructions
  1. In the bowl of a stand mixer, beat butter on medium speed and gradually add the sugar, beating well. Add egg and vanilla, and beat well.
  2. In a separate bowl, combine the flour, baking soda, salt, chopped pecans, and spices. Add this dry mixture to the butter mixture and stir to combine.
  3. Shape the dough into two approximately 12-inch logs. Wrap each in wax paper and chill for at least two hours.
  4. When ready to bake, preheat oven to 350°F. Unwrap dough and cut into 1/4-inch slices. Place on ungreased (or Silpat-lined) baking sheets, and bake for 10 to 12 minutes.
  5. Cool slightly on baking sheets, then remove to wire racks to cool completely.
