Vegan Oat Muffins with Dried Fruit and Nuts

any variety will do – I use a gluten-free blend

baking powder

coconut sugar

cup
almond milk
1/4
cup
apple sauce

coconut oil

granny smith apple
peeled & shredded
1/4
cup
walnuts
chopped
1/2
cup
dried cranberries
Streusel Topping
1/4
cup
rolled oats
1
Tablespoon
coconut oil
1
Tablespoon
cinnamon

Tablespoon
coconut sugar
Instructions
Preheat oven to 400 Degrees F. Lightly oil, or line muffin tin with paper liners, and set aside.
In a large bowl combine flour, baking powder and cinnamon.
In a separate bowl, add sugar, milk, apple sauce and oil. Blend until smooth and then add apples, cranberries and walnuts.
Transfer the batter to the muffin tins.
In a small bowl, mix topping ingredients together. Using your hands, sprinkle topping evenly over each muffin.
Bake for 26 minutes, and then let cool for at least 5 minutes before eating.

These are best served warm with a nice glass of almond milk
or a cup of coffee.
