Wild Black Cod Sautéed Fillet with Potatoes and Broccoli
Ingredients
2cod fillets6 ounce
2shallotssliced thin
4clovesgarlicminced
1lemonjuiced
1 1/2cupsbroccoli
1poundnew potatoeshalved or quartered, red or yellow skinned
1/2cupolive oil
2teaspoonsfresh rosemaryminced
Salt and Pepperto taste
Instructions
Place potatoes in a medium saucepan. Cover with water and add salt.
Cook until tender. Drain and set aside to cool.
Place 1 inch of water in a saucepan with a steamer insert. and bring it to a boil. Add the broccoli and over. Reduce heat and let cook for about 5 minutes.
Remove from heat, uncover, and set aside to cool.
Heat 1/4 cup olive oil in a large skillet. Add garlic, shallots, and rosemary and cook until tender.
Add fillets to the pan and sprinkle with half of the lemon juice.
Cook about 4 minutes, then turn.
Add remaining lemon juice.
Continue cooking until fillets flake easily with fork.
