Buffalo Chicken Bites with Blue Cheese Dip

Description

There’s no need to make wings when you have Buffalo chicken bites with blue cheese dip on your plate. It’s the ideal game day appetizer.


Ingredients

For the Dip:

  • 1 Tbsp whole milk
  • 4 oz cream cheese, room temperature
  • 2/3 cup crumbled blue cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup chopped green onion, green parts only
  • 2 garlic cloves, minced
  • 1 tsp freshly ground black pepper
  • 1/2 tsp salt

For the Bites:

  • 2 cups cooked and shredded or finely chopped chicken breast
  • 1/4 cup Frank’s Hot Sauce (more or less to taste)
  • 1 tablespoon unsalted butter, melted
  • 24 wonton wrappers
  • 1/4 cup crumbled blue cheese, or your favorite blue cheese dressing
  • Olive oil or cooking spray

Instructions

  1. Add all ingredients for the blue cheese dip to the bowl of a food processor or high-speed blender. Process until smooth, scraping down the side as necessary. Transfer to a serving bowl, cover, and chill in the refrigerator until ready to serve, for at least 20 minutes.
  2. Preheat oven to 375˚F.
  3. To assemble the bites, place chicken, hot sauce, and butter in a medium-sized mixing bowl and stir with a wooden spoon to combine.
  4. On a clean work surface, place one wonton wrapper in front of you. Spoon about 1-2 teaspoons of the chicken mixture into each wonton wrapper, keeping it to one half of the wonton, and leaving a border of about ½ inch. Resist the temptation to add too much filling, because you want these to stay intact when you bake them.
  5. Sprinkle with 1 teaspoon of crumbled blue cheese, or drizzle with 1 teaspoon blue cheese dressing.
  6. Dip your finger in water and wet the edges of the wonton wrapper. Fold the empty side of the wrapper over the chicken mixture, and press together to form a triangle. Press the edges together tightly to seal.
  7. Repeat with the remaining wrappers, until you run out of filling.
  8. Arrange on a rimmed baking sheet, with space in between so they do not touch. Spray lightly with olive oil.
  9. Bake for 12-15 minutes, until edges are lightly browned. Let cool for about 5 minutes on the baking sheet before serving, alongside the dip.
