Healthier Oatmeal Chocolate Chip Muffins

Description

Healthier oatmeal chocolate chip muffins are made with whole wheat flour and applesauce for a nutritious spin on a bakery favorite.


Ingredients

Scale
  • 1/4 cup melted coconut oil, or canola oil 
  • 1/2 cup low-fat milk, or dairy-free milk alternative 
  • 2 large eggs
  • 1/2 cup packed light brown sugar
  • 4 ounces unsweetened applesauce
  • 3/4 cup old fashioned oats
  • 1 1/2 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons ground flax seeds 
  • 1/2 cup dark or semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Lightly grease or line a 12-cup muffin pan. 
  2. In a large mixing bowl, whisk together oil, milk, eggs, brown sugar, and applesauce until well combined. Set aside. 
  3. In another mixing bowl, combine oats, flour, baking soda, salt, and ground flax. 
  4. Slowly stir flour mixture into the wet ingredients until just combined. 
  5. Pour batter into prepared muffin tin, filling each cup about ⅔ of the way full. 
  6. Place pan in the oven and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove pan from the oven and set aside to cool for 5 minutes. Gently remove muffins from pan and place on a cooling rack to cool completely. Store in an airtight container for 3-5 days.
