  1. Combine the sugar and 1/2 cup water in a small saucepan and place over medium-high heat for about 4-5 minutes, until the sugar has dissolved and simple syrup has begun to thicken. Transfer to another container and cool completely.
  2. Place the lemon juice, simple syrup, and the rest of the water in a large pitcher and stir to combine.
  3. Add the pineapple and passion fruit juices, coconut water, and fresh ginger. Stir to combine.
  4. Chill for a few hours before serving, or serve in tall glasses over ice, garnished with pineapple chunks or slices.
