About Meat Thermometers
A meat thermometer is a kitchen tool used to measure the internal temperature of meat, such as roasts, steaks, and poultry. As a cut of meat cooks, the level of doneness is correlated to its internal temperature, so that a temperature reading will indicate when your cut is cooked as desired.
It will have a sharply pointed metal probe to insert into the core of your meat, and a dial or digital readout to display the temperature.
Some will show only the temperature, while others will have a variety of markings to select the type of meat being cooked (beef, lamb, pork, poultry, and fish), as well as the specified degree of doneness (rare, medium, or well-done).
They come in a variety of styles including the classic dial style, simple folding units, infrared scanners, and two-piece base and probe units.
There’s even wireless units so you can be cooking outside on the BBQ or a smoker, but still have the freedom to work inside with a clip-on receiver to monitor progress.
Some of these can be left in the oven while cooking, while others can’t.
The old school dial style uses a bi-metallic strip that rotates a needle to indicate temperatures.
Another common style is the pop-up variety commonly found in turkeys – a spring is released when the meat reaches a set temperature, popping up the cap to indicate completion.

Infrared surface scanners measure the surface temperature of the object the laser is pointed at, rather than internal temperatures. As such, they can’t reliably be used on chicken, turkey, pork, meatloaf, or any dish that requires a specific core temperature for food safety.
When using a meat thermometer, the tip of the probe should be inserted into the thickest part of the meat, but not touching the bone.
If the probe makes contact with bone, an inaccurately high reading will occur as bone conducts heat better than muscle.
And it never hurts to take a reading in a couple of different spots to ensure the accuracy of the temperature displayed.
Cooking meat to a specific interior temperature is important, because precise levels of heat are required to kill pathogens that may cause the most grievous of foodborne illnesses.
Using a thermometer is really the only way to accurately gauge how well the meat is cooked in order to kill bacteria, and conversely, it also helps to prevent overcooking the meat.
And according to the USDA, meat that’s overdone is not only dry and tough, it also suffers from significant nutrient loss as well.

Cleaning and Maintenance
To prevent cross-contamination of bacteria from raw foods to other foods, all thermometers used on foodstuffs should be washed with hot, soapy water before and after each use.
Take care to read the recommended cleaning technique for each model, as some should only be wiped down and kept away from hot liquids or water.
Completely immersing food thermometers in water is generally not advised. And as the tip of the probe can be quite sharp, using a protective sheath for storing is always a good idea.

This! Yes! I have long been an advocate of using a meat thermometer. It not only takes guess work out of cooking it also is very important for food safety. If more people used one for holiday meals there would be a lot less sickness after Thanksgiving dinner to be sure. In my college days I was restaurant management and I took several food safety courses over those years. You can’t emphasize temperature control enough when it comes to food safety or quality.

Unfortunately, most of my family likes their meat well done (In other words, cooked to death), so I would find myself using only one setting on these lovely thermometers. It escapes what people have against a good, bloody, medium rare steak. Good article nonetheless, I’ll have to buy one of these beauties for Father’s day (still a long time coming, but it never hurts to plan ahead), as my father is the only other person in my family who doesn’t like his meat charred beyond recognition.

Though I don’t cook much meat, a meat thermometer would be a good investment for those occasions on which I do. I tend to undercook things because I am so worried about overcooking the meat. I’m used to seeing the red pop up thermometers that we have for our turkeys. I used to always wonder how they worked and now I know. All though we once owned a meat thermometer, we barely used it. Now it is lost so we would have to buy another. I have seen some chefs on TV talking about how you can tell your meat is done. They did something like using different parts of their palm and use that pressure to match that off the meat your cooking. I’m probably am not making too much sense but essentially, just get the thermometer. It’s much safer and easier to use one then guess work.
The problem with different chef’s methods is trying to remember them in the moment you need them! And if you don’t have experience, they still leave you guessing… like you say, just get the thermometer.

Samsung had these at their booth in CES 2016in Vegas (CES is an electronics show every year demonstrating new technology). They had these kind of thermometers attached to an electronic cooker, which would then connect with the Wifi, and send you a notification on to your Phone or tablet. Samsung has taken the idea of a Smart Home very seriously. These cookers can measure the temperature of the food and the temperature at which the food cooks can be controlled with your Smartphone. I really fell in love with this.

Food thermometers are a huge improvement in catering safely especially in the area of fast food, however I spent a *very* long time queuing at a mobile food stand at an agricultural show this summer whilst the catering staff checked the temperature of every single sausage they sold!
I made the mistake of buying one for myself that doesn’t have a chart to show what temperature is correct for what meat, but I’ve memorised the main ones. Its something to take into account if you’re buying a new one though.

I desperately need one of these. My mom wants to get me something for my upcoming birthday and I might just email her this list! I have a bad habit of overcooking pretty much every larger cut of meat I attempt, but I have such a fear of serving it under cooked. I’ve actually done that twice before with chicken and ever since then I cook just about every kind of meat to death. Luckily no one has gotten sick from the under cooked food but it definitely knocked down my cooking confidence a bit! It would be the “I don’t need that” attitude that I can fall victim to from time to time, but the truth is is that once you try it, you wonder why you were cooking for so long without one. Of course the safety factor is huge, but also it is great for the accuracy of cooking. I like my steaks pretty close to rare, so I can figure out the exact temperature that I like.
